  • 1/2 cup corn meal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 3/4 cup skim milk
  • 1 tablespoon butter or margarine, melted
  • 1 egg


  1. Mix dry ingredients together.
  2. Add lightly beaten egg, milk and butter.
  3. Mix just until moist.
  4. Bake in muffin tins lined with cupcake papers for 20 minutes at 400F.
