Luscious Cheese Toast

Yield: Makes 1 Serving.

Ingredients

  • 3 Tbsp 1% low-fat cottage cheese
  • 1/8 tsp almond extract (I prefer vanilla)
  • 2 tsp sugar
  • 1 Tbsp low-sugar or sugar-free apricot jam (or flavor of your choice)
  • 1 slice whole-wheat bread

Directions

  1. Using a food processor blender, combine the cottage cheese, almond extract, sugar, and jam.
  2. Lightly toast the bread and spread it with the cottage cheese mixture.
  3. Place the toast on a baking tray and broil until the cheese begins to brown lightly. Enjoy.
