Rhubarb produces large poisonous leaves that are not to be eaten. Leaf stalks, however, are used in cooking and are commonly found in pies and other desserts. Rhubarb has a tart flavor. Nutritionally, one cup of rhubarb provides 26 calories, 6 grams of carbs, 2.2 grams of dietary fiber, 1.3 grams of sugar, 1.1 gram of protein. It is low in sodium and fat and has no cholesterol. Rhubarb also contains 351 mg of potassium.
