Ingredients

  • 1 lb new red potatoes
  • 1/2 cup sliced radishes (optional)

    Dressing:

  • 3 Tbsp plain, nonfat yogurt
  • 1 Tbsp reduced calories mayonnaise
  • 1-1/2 tsp Dijon mustard
  • 1/2 tsp garlic
  • 1/2 tsp dried basil
  • 1/4 tsp dried thyme
  • 1/4 tsp onion powder
  • 1/4 tsp salt (optional)


Directions

  1. Scrub potatoes & cube. Place in medium saucepan and cover with water. Bring to a boil. Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain. Mix dressing ingredients and combine hot potatoes, dressing and radishes. Serve hot or cold.
