Ingredients

  • 1 (16 oz.) can pumpkin
  • 2 cup skim milk
  • 2 eggs
  • 1 tsp. cinnamon
  • Dash of salt
  • 1 tsp. vanilla
  • 4 to 5 packets of sugar substitute, or to taste


Directions

  1. Preheat oven to 425F.
  2. Blend all ingredients.
  3. Spoon into a casserole bowl
  4. Bake at 425F for 15 minutes.
  5. Lower heat to 350F and bake another 40 minutes
  6. Garnish with chopped walnuts, if desired.
