Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 3 bunches spinach (about 2 pounds), stemmed and washed
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste


Directions

  1. In a skillet over medium heat, heat the oil. Add the mushrooms and garlic and saute for 3 minutes.
  2. Add the spinach, cover, and steam for 2 minutes. Add the lemon juice, salt, and pepper. Serve immediately.
